I'm referring to the end of all things baby in this house. Monster is now working on potty training. For good. He's been back and forth about using the potty for almost a year now - some days using it almost exclusively, while other days he flat out refuses.<br />
<br />
A week ago I hit a breaking point. I decided I was NOT going to buy anymore diapers (that's not entirely true, but I'll touch on that in a moment). Monster is almost three and a half now. He understands how to tell when he needs to go and whatnot, and he is definitely old enough to be done with diapers.<br />
<br />
All things considered, he's been doing pretty well with it. We use underwear exclusively during the day. And during the night he wears a pull-up, as mama isn't quite ready to deal with the stresses of night training. A couple accidents (which are to be expected), but nothing too messy or untimely so far.<br />
<br />
So this mama is happy dancing. I am so ready to be done with diapers. They're expensive, gross, and a big pain. They are the last remnant of the baby days, and I look forward to their departure. Once monster is completely done with diapers (day and night), we are throwing a party!<br />
<br />
Coming up later this week... I found a potential way to make some extra scratch on the side online. I've had my ups and downs being a stay-at-home-mom, and I'm glad that I was able to be with monster for these early years, but I am just about ready to re-enter the working world. Nothing that I can see myself doing regularly for any significant amount of my life. I get bored very easily. I wish I had done my schooling, got a degree, and knew what I wanted. Taking a break to stay home and then going back into the field would have been so much easier. I -could- go to school now (and I'd like to eventually, not sure what for though), but I don't want to have more school loans and debt for something I might tire of in the very near future.</span><br style="color: #351c75;" /><br style="color: #351c75;" /><span style="color: #351c75;">Schooling for and a career in massage therapy has been in the back of my mind for a couple years now. And I've recently begun doing a lot more research on it. But I'm still very unsure. Maybe I'd be more suited for a career in the nonprofit sector. I love to help and connect with people. </div><div style="color: black;">Finding a good pizza dough recipe can be a long and daunting task. You find one that seems promising, but it ends up being too thick/thin/doughy/whatever. I know I tried several different recipes before finding one that we all really, really like. Each time since then I've tweaked it a bit here and there (not so much the ingredients, moreso the process) to make it the best for my family's tastes. <div style="color: #741b47;"> 4 1/2 cups flour</div><div style="color: #741b47;">1 tsp salt</div><div style="color: #741b47;">1 tsp dry active yeast</div><div style="color: #741b47;">1/4 cup olive oil</div><div style="color: #741b47;">1 3/4 cups cold water</div><br />
<span style="color: #990000;">Start off by chilling the flour in the refrigerator for an hour or two. Preheat the oven to 350 degrees. Mix ingredients together (I start with a metal spoon, then mix by hand) until equally distributed.</span><br />
<br style="color: #990000;" /><span style="color: #990000;"> Split your dough into two equal pieces. If you are not feeding a large group, freeze one dough ball (they stay fresh for up to a month in the freezer). I stick mine into a freezer bag and spray some olive oil in there, works great. Take it out of the freezer the day before you plan to use it and place in refrigerator to thaw. Then let it sit out for an hour or two on the counter right before you plan to bake it.</span><br style="color: #990000;" /><br style="color: #990000;" /><span style="color: #990000;">Sprinkle the counter with flour, and then roll your dough ball in it. Work the extra flour into the dough until it is more manageable. Then roll the dough out to an even 1/8 - 1/4". Place your sauce and choice of toppings evenly over the pizza dough (and not too thick, or the center will remain doughy). The concept behind the site is pretty cool - connecting all your sites in one central location. But there are applications that currently do that (or very similar), so it's not particularly unique. However, there is definitely potential there.<br />

Yes, the boobie fairy visited me and I am no longer flat-chested. *happy dance* But I would give them up in a heartbeat to have my body go back to what it was before. Heck, there's a lot I would give up in order to rewind my body's history. But alas, that cannot be done.</div><div style="color: black;"><br />

But the fact of the matter is that things are the way they are and the past cannot be changed. However, hope is not lost. I can push myself to create a new body that I am able to love. But I wanted to make my pumpkin muffins with less sugar/fat/calories. This is what I came up with:</div><div style="color: black;"><br />

I get ridiculously excited and dive in head first. Things are going great in the beginning. But soon I begin to feel overwhelmed. I had done too much too quickly, and get burned out. But instead of simply cutting back a bit, which would be the logical thing to do, I find it easier to quit. Why? I'm not exactly sure. But it's what I tend to do and I am aware of it.</div><div style="color: black;"><br />
</div><div style="color: black;">So I am attempting to take a different approach to my workout and weight loss efforts this time around. I am sticking my big toe into the water and easing myself back into things. Warmer weather means shorts, tanktops, and swimsuits (UGH). I find myself dreading summer more and more with each passing year. I prefer to wear and am most comfortable in jeans, a hoodie, and flip-flops. </div><div style="color: black;"><br />
</div><div style="color: black;">My recent doctor visits have shown me something I'd been pretending wasn't happening - I have been gaining weight. Again. I didn't have struggles with my weight until I was pregnant with monster. I wasn't thin by any means, but I could eat whatever crap I wanted and barely work out without worrying about gaining weight. Heck, I lived on McDonald's, Starbucks, and ramen noodles in college and a couple years after. But now my weight is a constant battle.</div><div style="color: black;"><br />
</div><div style="color: black;">After having monster, dealing with post-partum depression, going crazy, and all that jazz, I had decided enough was enough. January of 2009 I began eating healthier and working out. I busted my butt, tons of sweat and tears, and fought my way down 35lbs. A hospital visit threw off my groove, and I had fallen off track. Fast forward to today... I'm back up to the weight I started at in '09 (and hating myself for letting it get out of hand again), and I have dealt with several other medical issues. But enough is enough, and I am ready to begin anew once again.</div><div style="color: black;"><br />
</div><div style="color: black;">I know it will be a tough road - I've been there. But I know I can do it - I've done it before. No more excuses. I need to take the time to take care of myself. Not just for swimsuit season (that is simply an added perk). I need to take care of my body. I need to be there for my son, for my husband. But most importantly, I need to do this for ME. I share this all in hopes that blogging about my struggles, venting my frustrations, and celebrating each little accomplishment and milestone will help to keep me accountable. </div><br />
